Pioppino Mushrooms

Pioppino mushrooms (Agrocybe aegerita) have slender, ivory stems with small to
medium caramel-brown caps that deepen in colour as they mature, giving them a
classic, “woodland” look. They offer a rich, earthy flavour with a gentle nuttiness and a
pleasantly firm, slightly chewy texture that holds up well in sautés, pasta, risotto, and
braises.
