Lions Mane

Lion’s Mane (Hericium erinaceus) is easy to recognize by its soft, shaggy “white pom-
pom” look, with long, delicate spines that resemble a small mane as it matures. Its

flavour is mild and naturally savoury, often compared to crab or lobster, and it has a
tender, pull-apart texture that turns lightly crisp and juicy when seared.
